Have you ever run out of fresh meat on a multi-day trip and wondered what to eat? Here is a wonderful vegetarian recipe, selected by Katie Stein Sather and tested by me!!
Sweet & Sour Curried Rice with dried fruit
From Wanapitei: Canoe Trippers Cookbook by Carol Hodgins
2 cups brown rice
1 cup bulgur
1 pkg dried onion soup mix
4 Tbsp margarine or oil
1 tsp salt
1 Tbsp garlic powder
1 Tbsp curry powder
½ cup walnuts, chopped
1 ½ cups chopped dried fruit: raisins, apples, apricots, banana chips, etc
7 cups water & ½ cup water
½ cup brown sugar
¼ cup vinegar
2 Tbsp soy sauce
Bring 7 cups salted water water to boil. Add rice, bulgur and onion soup. Simmer for 40 minutes. Meanwhile sauté fruit in margarine and spice for 5-10 minutes. Add nuts and sauté a few more minutes stirring constantly. Mix vinegar, sugar, soy sauce, and ½ cup water and add to fruit. Simmer about five minutes. Set aside in a warm spot. When rice is cooked mix together with the fruit. Enough for 6 cold & hungry teens.
My notes: I use one pot only, adding the fruit and spice directly to the rest closer to the finish time (meaning I don't have to carry margarine or oil either). Mix what you can ahead of time. Carry vinegar & soy sauce as packets from a fast food outlet. This amount of curry makes a rather bland version. I add more. If you need some meat, just add a can of Tuna or Chicken.

Low Fat Apricot Berry Muffins
2 ½ cup whole wheat flour
2/3 cup sugar
2 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1/3 cup margarine (Becel)
¾ cup plain yogourt
1/3 cup thawed Orange juice concentrate
2 eggs
½ cup chopped apricots
½ cup blueberries
½ cup cranberries
Cut margarine into dry ingredients. Whisk eggs, yogourt, and orange juice concentrate. Stir into flour mixture until just combined. Gently stir in fruit. Spoon into 12 muffin cups. Bake 375 * approximately 15 minutes.
